A Fall Day

A few weeks ago we visited this wonderful pumpkin patch in town. There is also a beautiful store that is open year round that I truly believe I could get lost in for days at a time. Noah loved exploring this new place.
The property outside was beautiful.
Noah went nuts running around like crazy. 
His mom & dad nearly went crazy running after him. 
Not really. He just loves to give us a good workout. 
This man. Has my heart. 
Debbie & baby Judah met us there too.
It was a nice evening. 
Noah enjoyed jumping over hay stacks in the maze.
Running wild & free this one.

Welcome Fall: Soup, DIY Garland, & a Cold


Fall has arrived. Living in Texas doesn't guarantee that it will stay for long but at least we are experiencing some signs of my favorite time of the year. Fall means it is time for yummy soup, fall decor, and a cold or two. 
Over the weekend I grabbed some fake leaves that I used for my fall table-scape last year & hot glued them to some twine. So easy. Its laughable. I really like the way they look over the doorway. I was going to do more fall decorating but then the sickness hit our home.
I love this time of year because everything is covered in leaves. It is beautiful. I don't want to rake them up. Unlike some people, I really LOVE them & they don't bother me at all. The more leaves in the yard the merrier. Just saying.
So yes over the weekend our home has become the house of the sick. Noah is the least sick with a nasty cough. He crawled into bed with us Friday morning after a very long night of him sleep walking & refusing to go back to sleep. Have mercy friends! This momma needs to learn how to comfort her 2 year old that doesn't want to sleep in his room all the sudden. Three nights in a row are killer. I should note that we refuse to let him sleep in our bed. Not happening.
Sunday morning I stayed home from church & kept Noah with me. Because I'm in the business of self diagnosing, I believe I have the flu. Or at least something just like it. Everything hurts & I sound like I've been smoking my entire life. (I dont smoke). On Sunday morning I got it in my head to make this yummy soup because I could tell the sickness was just getting worse. 
Friends, this really is the best Potato Soup. The best part, its all done in the crockpot. My friend Lauren shared her recipe with me nearly a year ago & I've made it 3 times. It makes a massive amount but its perfect to share with friends & then eat it for an entire week. It is so good that you don't mind eating it so long. Lauren found the recipe here.

Baked Potato Soup
5 lbs. Russet Potatoes (washed, diced, & I peel mine)
1 medium yellow onion
10 cloves of garlic minced
64 ounces chicken stock (I use %50 less sodium)
16 oz cream cheese (I use low fat)
1 tablespoon season all or seasoning salt
garnish with bacon, cheese, green onions.

In your crockpot add the diced potatoes, diced onion, garlic, seasoning, chicken stock. Cook on high for 5 hours. or 8 hours on low. Once the potatoes are soft add the softened cream cheese and puree soup. To do this, I use to use the blender. But that was an extra messy hassle. Now, we just unplug crockpot & plug in hand mixer & mix everything right there in the crockpot. Much easier. 
Stir up until the soup is the consistency you prefer.
